“Use of biotechnology to obtain ingredients and foods beneficial to health”

Objective: Research in microbial bioprocesses to obtain ingredients (probiotics and postbiotics) and fermented foods with health benefits, based on the role and behavior of the intestinal microbiota and in order to strengthen it.

Despite being an emerging market in Europe, the availability of fermented products in Spain is scanty and little information about their effects on health. In the BIOFOOD project, the possible symbiotic effect of the combination of probiotics with prebiotics, their use in microencapsulated form and postbiotic compounds whose use would potentially eliminate the need to maintain probiotics and allow the development of a different range of products with difficult functionalities to reach with live microorganisms is evaluated.
