“Development of tools to manage microbiological food deterioration risks”.

Thegeneral objective of this project is to develop management tools for microbiological risks in foods, focusing on deteriorating or spoiling micro-organisms, enabling smart decision making regarding the most suitable thermal preservation treatments so as to optimise the quality and profitability of food products.
These tools are based on a thorough and detailed knowledge of the most relevant deteriorating micro-organisms and the use of predictive microbiology or quantitative biology that implies a knowledge of the death and growth responses of micro-organisms to intrinsic and environmental factors expressed in quantitative terms through mathematical equations or models.
The data and models will be used to interpret the effect of the processing, distribution and storage conditions on microbial growth, allowing predictions to be made (quantifying) in terms of the contribution of each stage of the process.
