Legislation applied to olive oil production is very strict, which is why launching new business models within the sector is very restricted.
The aim of the project is to develop new products based on olive oil: oil and dressings in powder and olive tree leaves: extracts rich in antioxidants, using microencapsulation, drying and purification techniques.
The aim is to achieve products that are introduced and consolidated within the gastronomic sector thanks to their quality and consumer acceptance.
This project has been funded by the Government of Navarre via the calling for Grants for Technology Centres and Research Bodies and the diffusion of knowledge to undertake R&D projects 2017
