The aim of the project is the research and application of combined conservation strategies that minimize the use of chemical preservatives (nitrates and nitrites) in the manufacturing process of cured and/or fermented meat derivatives while maintaining the organoleptic properties of the products, and ensuring the food safety of the products.
CNTA can establish itself as a reference center in the agri-food sector, as well as generate knowledge to increase its activity.
