How do we do this?

We develop biotechnological tools to optimize traditional fermentation processes or create new methods for food production. Biotechnology offers key advantages, such as decoupling food production from land use, diversifying the range of food products, and developing healthier options

We isolate and characterize microorganisms of industrial interest for ingredient and food production.

We study microbial metabolism to optimize the production of high-value compounds.

We use wild and recombinant strains (GMOs) to develop and optimize fermentation processes (for food, biomass, and precision), both at the laboratory and pilot plant scale.

We conduct an in-depth characterization of the properties of these new ingredients.

We develop applications for the new ingredients in food matrices.

We develop models of these processes to assist companies in industrializing the new ingredients.

Our facilites

Microbiology research laboratory equipped with an anaerobic chamber for working with strict anaerobic bacteria, among other specialized equipment.

Bioreactor set with capacities of 500 mL, 2 L, 4 L, 30 L, and 150 L, along with auxiliary equipment for developing fermentation processes (batch, fed-batch, and continuous) from laboratory to pilot scale.

Incubation chamber for solid-state fermentation.

Analytical equipment for real-time monitoring of fermentation processes, complemented by certified analytical laboratories.

In-house strain collection with over 400 QPS (Qualified Presumption of Safety)-classified bacteria, molds, and yeasts, with potential applications in food formulation and/or the production of additives and ingredients.

Characterization of starter cultures and sourdoughs.

In vitro characterization platform for assessing the probiotic and/or functional properties of bacterial strains.
