Study and development of new applications of UV light in the food industry.

Objective:

Study and develop strategies for hygiene and preservation of foods based on the use of UV light, in order to obtain safe, more stable foods that maintain the nutritional, functional and organoleptic own oproperties

Historically, the conservation strategies used by the food industry to achieve safe, stable and adequately useful products are based on the application of heat treatments and/or the addition of chemical preservatives. These strategies have their limitations:

  1. – High energy and water consumption
  2. – Condition on the physical and sensory qualities of the product (color, texture)
  3. – Not 100% effective for the total elimination or inactivation of microorganisms
  4. – The use of chemical agents causes intolerance in consumers, there are certain markets that have strong legislation in this regard
