“Development of 3D printable ingredients packaged in single-use capsules”

Objective: Develop at laboratory-pilot scale 3 3D printable plant formulations packaged in disposable capsules, with microbiological (shelf life), functional (printability) and sensory characteristics adapted to the current market.
– Shelf life: formulations must have a shelf life determined according to the type of product (refrigerated, frozen and / or ambient temperature).
– Printability: after printing, the formulation must reach a minimum of 2 centimeters in height and maintain the height for at least 15 minutes.
– Sensory quality: after printing, the formulation must be organoleptically assessed by a panel of tasters in a preference test as “sensory adequate” (> 5 on a scale of 1 to 10).
